So just to give you a recap, we suggested grilling Watermelon and Feta Skewers, Scallop, Orange and Cucumber Kebabs, Grilled Cheese, Quesadillas and Artichoke. Today, we want to give your our second installment on this topic and we’re pretty sure that these items on our list will make you say, “Oh really?!” Yup, you may have not tried grilling these treats!


1. Meatballs


Create a delicious rub that will flavor your meatballs! Get a mixing bowl and combine the salt, garlic powder, paprika, brown sugar, cumin, chili powder, mustard powder, black pepper and cayenne. In a skillet, heat some vegetable oil and then add some onions. Cook for about five minutes and then add the chili powder and garlic. Transfer the ingredients in a bowl and mix in the pork, beef and egg. Combine everything then create balls out of the ground meat. Grill the meatballs for about 8 minutes. Serve with your choice of barbecue sauce.


2. Nectarine


Get a mixing bowl and combine some yogurt, tarragon, sugar and mascarpone. Mix thoroughly and then refrigerate while you’re prepping the nectarines. Slice the nectarines in half and ensure to remove the pits. Brush the meaty side with vegetable oil and then proceed to oiling the grill racks. Grill the nectarines with the meaty side facing down until they soften and turn a little brown. This will probably take about 2 minutes. Once done, fill each of the nectarine halves with the mascarpone mixture and drizzle with hone or balsamic glaze. Top with almonds and add more tarragon if preferred.


3. Tofu


Get the block of tofu and put it on a plate. Afterward, put another plate on top of it then stack another object that weighs about 3 to 5 pounds. Press the tofu for about 30 minutes to flatten it a little. Drain the water and slice it lengthwise, creating 4 slabs and then medium-sized cubes that you can skewer. Set the tofu cubes onto the skewers and then set them aside. Now get a mixing bowl and combing some olive oil, lime juice, garlic, cilantro, chili powder, salt, cayenne pepper and black pepper. Whisk the ingredients together and brush the tofu with the final mixture. Cover the tofu with plastic wrap and put them inside the fridge for about 2 hours. Grill them for approximately 10 to 15 minutes while occasionally brushing them with the rest of the marinade.


4. Avocado


Does grilled avocado sound weird? Actually, it’s delish! All you have to do is prepare your grill ahead and then prep the avocados. Slice them into 4 parts and remove the pit. Season the avocados with salt and pepper then brush them with grapeseed oil. Grill them indirectly for about 2 to 4 minutes and then flip them over. Remove them from the grill and set aside. Afterward, get your reliable blender and process some salt, vinegar, mustard, black pepper, parsley and garlic. Continue blending the ingredients while slowly pouring the olive oil through the small opening at the top of the jar. Serve your grilled avocados with this special dressing and then finally, garnish them with parsley sprigs!


5. Ice Cream


Well this one’s surely a treat especially for those who love sweets! Just get a large ice cream scoop and create two-inch balls out of your favorite ice cream! Put them in a dish and place back into the freezer. Leave them there for approximately 1 to 2 hours. While waiting, put two large eggs and some vanilla in a bowl. Beat the ingredients with a fork. Get your ice cream balls and dip them in the egg mixture. Make sure that they’re all covered. Afterward, dip the ice cream balls in shredded coconut. Again, they should be well-covered. Dip them in both eggs and coconut again to thicken the coating. When the ice cream balls are already solid, put them on skewers and place them back into the freezer. Grill without using the grates and cook for about 1 to 2 minutes on each side.
