1. Smoked BBQ Chicken


This is a quick recipe that doesn’t require your own homemade sauce. You can simply put your 5-pound chicken in a plastic bag and then follow up with your choice of Italian dressing. Put the chicken in the fridge for approximately 2 to 3 hours. After the allotted time, remove it from the fridge and apply your choice of rub on it. Make sure that you’ll massage the chicken a little to let the flavors seep into the meat. Roast the chicken and when its internal temperature reaches 180 degrees Fahrenheit, remove it from the grill. Let it rest for about 10 minutes then carve and serve!


2. Smoked Grilled Pork Chops


Combine black pepper, salt, onion powder, garlic powder, Worcestershire sauce, paprika and smoke flavoring in a bowl. Stir the ingredients well to distribute the flavors. Sprinkle the rub on the pork chops and then let it stand for about 10 minutes. After that, grill the pork chops for about 12 minutes on each side. The internal temperature should be 145 degrees when you remove the meat from the grill.


3. Home-Smoked Salmon Fillet


Get a bowl and combine water, sugar, salt and brown sugar in it. Stir until the sugar dissolves. Add the salmon fillets in the bowl and make sure that they are soaked in the brine. Cover the bowl and refrigerate the salmon in the brine overnight. The following day, discard the brine and rinse the fish under tap water. Let the fish fillets dry for about an hour then grill indirectly for about 30 minutes to an hour.


4. Pulled Pork


Combine these spices to make a great rub: salt, light brown sugar, onion powder, garlic powder, Spanish paprika, celery salt, chili powder, ground black pepper, white ground pepper and dried thyme. Stir the spices to distribute the flavors evenly. Pat this rub onto the pork shoulder so you won’t over flavor the meat. Grill the pork shoulder while maintaining a temperature of 200 degrees. When the internal temp of the meat reaches 165 to 170 degrees, remove it from the grill and wrap it with aluminum foil. Put it back on the grill and roast for another round until its internal temperature reaches 195 degrees.


5. Smoked Oysters


Scrub the oysters’ shells with a brush and discard those that are already opened. Open shells mean that they are already dead and no longer good for eating. Put the oysters on the grill and then cover with the lid. Let them cook for about 8 to 10 minutes until they start to open. Pry them open with an oyster knife and then serve with butter, hot sauce and lemon wedges.


6. Cheesy Smoked Meatballs


Combine the ground pork, ground chuck, parmesan cheese, onion, egg, grated cheddar cheese, bread crumbs, barbecue sauce, rub, yogurt and Worcestershire sauce in a large bowl. When the ingredients are evenly mixed, form meatballs with your hands. Afterward, press a cheese cube on each of them and then place them in the rotisserie basket with a lining of aluminum foil. Grill the meatballs until they reach 160 degrees Fahrenheit.


7. Smoked Rib-eye Roast


Create a marinade out of molasses, brown sugar, soy sauce and water in a saucepan. Stir the ingredients until the sugar dissolves. Create a rub by combining sage, rosemary, black pepper and sea salt. Set these two aside and prep the meat. Pierce the rib-eye with your knife to make tiny holes which will be filled with garlic spears and jalapenos, too. Pour the marinade that you made into an ice chest and let the roast stay soaked overnight. Grill the following day while checking on the charcoal every 30 minutes. Remove from the grill when the temperature reaches 140 degrees Fahrenheit.
