8. Cheese-Stuffed Grilled Peppers

 

Make a cheese stuffing by mixing Parmigiano-Reggiano and cream cheese. Add salt and pepper to taste. Afterwards, remove the stems of Cubanelle or Anaheim peppers. Remove their seeds and membranes as well. Fill them with the cream cheese stuffing and put the pepper tops back. Rub with olive oil and then grill over moderately high heat.
