Lechon asado is a unique Cuban dish that involves marinating a pig’s shoulder in a mojo sauce. The mojo criollo is made by combining orange juice, sherry, garlic, onion heads, black pepper, oregano, salt, cumin, olive oil and bay leaf. After injecting the meat with the sauce, it will be roasted for about an hour until its internal temperature reaches 150 degrees Fahrenheit.
