magic cook boxWe’ve roasted pork, beef, chicken, shrimp, lobsters, crabs, turkey and all those delicious stuff we normally cook on the grill. We’ve even tried grilling pizza! But do you know that there are still a lot of treats that you can cook in your La Caja China? Yes, there are. We’ve scoured the internet to compile this list for you! Check out these food items you didn’t know you could grill in your magic cook box!

1. Watermelon and Feta Cheese Skewers

We don’t know if this is too rare but hey, grilling watermelons isn’t a common thing for most of us. How much more when they’re paired with feta cheese and skewered on sticks? Just slice a seedless watermelon and feta cheese into cubes. Place them on sticks and put mint leaves in between them. Drizzle with pomegranate molasses then grill.

2. Scallop, Orange and Cucumber Kebabs

Scallops are so delish they’re actually on our favorite seafood list! You can cook these on the grill as skewers, too. Simply combine some orange juice and honey in a mixing bowl. Afterward, thread your orange wedges, cucumber, ginger and scallops on sticks. Season them with salt and pepper to taste. Grill the skewers for approximately 4 to 6 minutes while basting them with the honey and orange juice sauce.

3. Grilled Cheese

Yes, you can make these yummy sandwiches on the grill, too! What do you think? Fire up your grill and start preparing your ingredients. Slice your French baguette so that they’ll measure about half an inch thick each. Butter one side of the bread generously and then add your preferred cheese. Put another slice of baguette on top and then grill the sandwich until it’s brown and crispy.

4. Quesadillas

Grill your quesadillas, baby! On a plate, put your boneless and skinless chicken thighs. Sprinkle them with adobo seasoning and let the rub sit in for about 15 minutes. Heat your grill and put the chicken on them. Cook them for about 10 minutes on each side or until they are cooked to your preference. Slice them into cubes so that you can wrap them with the tortillas. Put the tortillas on the grill and sprinlle them with cheese, onion, chicken, olives and chiles. Place another tortilla on top the ingredients and grill them until they’re brown on each side. This will probably take 3 minutes.

5. Artichoke

Fire up the grill. Get a large bowl and fill it with cold water. Squeeze the halved lemons into it. Cut the artichoke’s stem off; snap off two rows of its leaves and cut off a third of its top. Slice the artichoke into 4 parts lengthwise. Place them in the lemon water. Now get a large pot of water and add salt in it. Bring it to a boil and then add the drained artichokes in there. Boil them until they’re crisp, approximately 15 minutes. Drain them and then transfer to a rack. Now to barbecue the artichokes, whisk some oil, mint and lemon juice in a bowl. Add salt and pepper to taste. Use this sauce to brush the boiled artichokes. Grill them for 8 minutes, ensuring that you’ll turn them occasionally. Drizzle with the remaining dressing and serve.
