It may not be summer yet but that’s no excuse to stop hosting backyard barbecue parties! Do you know what comes into our minds whenever we hear the words barbecue and La Caja China? Of course! A juicy, crispy, tender and flavorful pig roast! Just thinking about our fingers pinching a piece of that crispy skin makes us drool. So if we just made you crave, take that La Caja China out of the storage; prepare your pig; send out invitations and roast away! Here are some marinade recipes you should try!
If you love herbs and spices, this marinade will tickle your taste buds! Simply peel 1 ½ cups of garlic and chop them all up. Put them in a large stewpot afterward. Next, chop three bunches (each) of these fresh herbs: thyme, sage, rosemary and parsley. Make sure that they’re chopped finely to prevent them from clogging the injector. Add them into the stewpot with the chopped garlic. Pour two cups of vegetable oil into the pot. Follow up with a cup of sea salt, a cup of brown sugar, a cup of cayenne pepper and two tablespoons of ground mace. Pour half a gallon of apple cider and half a gallon of water as well. Bring the mixture to a boil and use it for your pig roast!
Brian Boitano’s marinade is a version of the famous Cuban mojo. It uses 2 limes, 2 Meyer lemons, 2 blood oranges, 2 tablespoons of salt, a tablespoon of ground cumin, a tablespoon of dried oregano, a tablespoon of ground black pepper, 6 large garlic cloves and ¾ cup of annatto oil. All the ingredients are combined in a large mixing bowl and stirred thoroughly before use.
This recipe is easy-to-do. Just combine a quarter cup of salt, half a cup of black pepper, quarter cup of dried oregano, half a cup of crushed garlic, half a cup of adobo seasoning, half a gallon of lime juice and a gallon of orange juice. It’s still Cuban-style although a little different from Roberto’s mojo recipe. If you need the adobo seasoning, just follow our recipe or order from our website.
Get a mixing bowl and whisk together 2 cups of apple cider, 2 tablespoons of your favorite rub seasoning (adobo seasoning), 2 tablespoons honey, 2 tablespoons apple cider vinegar, half a teaspoon of cayenne pepper, half a cup of lemon juice, a quarter cup of orange juice, 2 teaspoons kosher salt and a dash of Worcestershire sauce.
If you want to give your pig roast a Hawaiian taste, use this recipe. Combine a quarter cup of cooking oil, a quarter cup of water, a quarter cup of soy sauce, a quarter cup of sugar, 2 cloves of garlic, 2 tablespoons of molasses, a teaspoon of dry mustard, a teaspoon of ginger and a teaspoon of salt.
