A rotisserie is a roasting style that involves skewering the meat on a spit. A spit is a long solid rod that will hold the food while it is being grilled or cooked over a campfire, a fireplace, charcoals or in an oven. Rotisserie roasting is a popular method that’s best for cooking large chunks of meat or whole animals like turkeys, chickens and pigs. The rod rotates and in the process cooks the meat evenly. This way, you can continuously baste the meat and even allow it to cook in its own natural juices.

Delicious Rotisserie Recipes You Should Try!

1. Cuban Rotisserie Pork Loin With Peppers and Onions

Process these ingredients in a blender: lime juice, orange juice, dried oregano, olive oil, kosher salt, cumin and ground black pepper. Blend them until the mixture is smooth. Butterfly the pork and open it up to flatten it. When you’ve reduced its thickness to ¾ inch, rub the mixture onto the pork. Make sure that you’ll rub both sides liberally. Afterward, roll the pork to create a tight cylinder. Use twine to secure it then put it in a baking sheet. Cover the meat with plastic wrap and put it in the fridge. Leave it there for a minimum of two hours. When you’re ready to cook, skewer the pork loin onto the spit and grill for about 1 ½ hours until the meat’s temperature reaches 145 degrees Fahrenheit.

2. Herb Rotisserie Turkey Breast

Get a pot and combine some vegetable broth, brown sugar and kosher salt. Heat the pot until the sugar dissolves and then let the brine cool. Put the turkey in another stockpot and pour the brine in. Fill the pot with water until the meat is soaked. Put the pot inside the fridge and leave it there overnight. The following morning, get a bowl and combine some lemon juice, mustard, extra virgin coconut oil, thyme, black pepper, rosemary, minced garlic and paprika. Put some garlic cloves and herb mixture under the turkey breast skin. Rub the rest of the turkey and save some of the mixture for basting. Put the turkey breasts in the fridge and let it marinate overnight. When you’re ready to grill, put the turkey breasts on the spit and secure them with the use of cooking twine. Cook for about 20 minutes per pound of the turkey. Once perfectly cooked, let the turkey rest for 30 minutes before carving.
