Process these ingredients in a blender: lime juice, orange juice, dried oregano, olive oil, kosher salt, cumin and ground black pepper. Blend them until the mixture is smooth. Butterfly the pork and open it up to flatten it. When you’ve reduced its thickness to ¾ inch, rub the mixture onto the pork. Make sure that you’ll rub both sides liberally. Afterward, roll the pork to create a tight cylinder. Use twine to secure it then put it in a baking sheet. Cover the meat with plastic wrap and put it in the fridge. Leave it there for a minimum of two hours. When you’re ready to cook, skewer the pork loin onto the spit and grill for about 1 ½ hours until the meat’s temperature reaches 145 degrees Fahrenheit.
Get a pot and combine some vegetable broth, brown sugar and kosher salt. Heat the pot until the sugar dissolves and then let the brine cool. Put the turkey in another stockpot and pour the brine in. Fill the pot with water until the meat is soaked. Put the pot inside the fridge and leave it there overnight. The following morning, get a bowl and combine some lemon juice, mustard, extra virgin coconut oil, thyme, black pepper, rosemary, minced garlic and paprika. Put some garlic cloves and herb mixture under the turkey breast skin. Rub the rest of the turkey and save some of the mixture for basting. Put the turkey breasts in the fridge and let it marinate overnight. When you’re ready to grill, put the turkey breasts on the spit and secure them with the use of cooking twine. Cook for about 20 minutes per pound of the turkey. Once perfectly cooked, let the turkey rest for 30 minutes before carving.
The giblets should be removed and discarded. Afterward, wash the chicken and dry it with paper towels. Apply olive oil onto the meat. Tie its legs and wings with twine. In a mixing bowl, combine black pepper, salt, garlic powder, chili powder, onion powder, sugar, dried thyme and paprika. Mix the ingredients well and then evenly apply on the chicken. Wrap the chicken with saran and put it in the fridge. Leave it there for at least 4 hours. Overnight is recommended. Skewer the chicken and grill for about 1 ½ hours until its internal temperature reaches 160 degrees Fahrenheit.
Make a delicious rub first. Get a mixing bowl and combine some thyme, oregano, rosemary, salt, dry mustard and pepper. Rub this mixture onto the meat and grill the meat using the rotisserie. Cook for approximately an hour and 40 minutes until the internal temperature of the meat reaches 130 degrees Fahrenheit.
Get a re-sealable plastic bag and put the leg of lamb in there. In a bowl, mix together some lemon juice, zest of lemon, minced garlic, olive oil, onion powder, fresh thyme, fresh ground black pepper and fresh oregano. Mix the ingredients thoroughly and then pour it over the lamb in the plastic bag. Shake the bag a little to ensure that the meat is soaked all throughout. Put the bag with the lamb inside the fridge and let it stay there for about 4 to 6 minutes. When the marinating time is over, discard the marinade and skewer the lamb. Grill the meat for about 1 ½ to 2 hours until its internal temperature reaches 145 degrees Fahrenheit. As for the dressing, process these ingredients in a blender: lemon juice, fresh oregano, fresh thyme, olive oil, black pepper, sea salt and onion rings. Carve the lamb when cooked and serve with the herb dressing.
