1. Grilled Veggies
Why go all-meat when you can also enjoy a smoky meal out of delicious, healthy vegetables? Slice up an eggplant into half-inch rounds. Halve and seed two red and two yellow bell peppers. Slice up two zucchinis and don’t forget to prep two onions, peeled and sliced into half-inch thickness. Brush these veggies with vegetable oil and smoke them for about 30 minutes. Brush the grill rack with oil and cook these babies for about 10 to 15 minutes, turning them once. Baste with teriyaki sauce as often as you’d like to let the flavor sink in until they’re all cooked.
2. BBQ Corn
Well we can’t forget the corn, can we? It’s a barbecue staple! Place ten ears of corn in an ice chest and pour a quart of beer over top. Dump ice in the container; cover it with the lid and let it sit overnight. Smoke the corn for 20 minutes or so and cook them for 1 to 2 hours. Make sure to turn them every 20-minute interval until they’re done.
3. Smoked Steelhead Trout
Now for the fish! Drizzle olive oil over your fish fillet and season with rosemary and garlic. Rub the mixture on the fish and refrigerate overnight. The following day, dissolve a cup of sugar-based curing salt in water and pour it onto the fish. Marinate for about 15 minutes per half-inch of thickness. After marinating, remove the liquid. Place each piece of fillet onto a small piece aluminum foil and season with pepper. Smoke them for about two hours until the internal temperature of the fish reaches 165 degrees Fahrenheit. Remove from the smoker and let them rest for 20 minutes before serving.
4. Smoky Ribs
Make sure that the grill is preheated when cooking your ribs. Rub your meat with steak seasoning, ensuring that all areas are covered. When the coals are ready, place your meat on the grill and smoke them, checking the coals every 45 minutes. Grill them for about 4 to 6 hours, depending on how well you want them cooked.
5. Cheesecake Popsicles
A cold dessert will surely beat the heat this summer! Crush eight sheets of graham crackers into smaller pieces. Mix two tablespoons of melted butter, two small packages of pudding mix and four cups of milk. Whisk until the mixture is smooth. Get your Dixie cups and add a spoonful or a layer of pudding mix into them. Add a layer of graham crackers and then a layer of sliced strawberries and berries. Add another layer of graham crackers. Fill them up with the pudding mixture. Insert Popsicle sticks and refrigerate.
6. Raspberry Spritzer
Iced beverages are really refreshing! Combine two cups of seltzer, three cups of raspberries, two sprigs of mint and three ounces of raspberry-flavored syrup in a pitcher. Stir and add ice cubes. Voila! Raspberry goodness!
