1. Grilled Potato Salad By Rachael Ray


Get a bowl and place your clean potatoes in it. Toss with extra virgin olive oil, grill seasoning and chopped rosemary leaves. Grill for about 4 to 5 minutes per side. While grilling, get another bowl and mix together chopped oranges, red onion, red wine and extra virgin olive oil. Remove the potatoes from the grill and add into the salad bowl. When ready to serve, add some chopped arugula. Toss to distribute the flavor.


2. Homemade Black Bean Veggie Burgers


In a bowl, mash black beans until they turn pasty and thick. Then, process some bell pepper, garlic and onion in the food processor. Stir the mixture into the mashed black beans. Get another bowl and combine some chili powder, egg, chili sauce and cumin. Stir the mixture into the mashed black beans. Add some bread crumbs to hold the ingredients together. Divide the ingredients to create 4 patties. Grill the patties for about 8 minutes on each side. Put in buns and serve with your choice of toppings.


3. Grilled Zucchini with Garlic and Lemon Butter Baste


Score the zucchini halves diagonally, making cuts that measure about a quarter of an inch deep. In a saucepan, combine butter with lemon-pepper seasoning, lemon juice concentrate, garlic powder, curry powder and oregano. Season this with salt and pepper to taste. Brush the zucchinis with the butter sauce on their cut side. Put them on the grill and cook for about 12 minutes, until they soften. Sprinkle with cheese if preferred. Let the cheese melt for a minute and then transfer to a platter.


4. Grilled Tofu Kabobs


 Get a bowl and mix together the vinegar, soy sauce, chili paste, garlic, orange zest and sesame oil. Add the tofu and ensure that they’re coated. Refrigerate overnight. Thread the tofu onto skewers. Set aside the marinade. Grill for about 4 to 6 minutes total until they have browned. Serve ASAP.


5. Cajun Grilled Corn


In a mixing bowl, combine some paprika, dried oregano, onion powder, garlic powder, dried thyme, salt, ground red pepper and black pepper. Mix the ingredients thoroughly and then set aside. Pull the husks from the corn but do not remove them. Sprinkle the corn with the rub that you just made. Grill for about 12 minutes while turning them occasionally.
