Now to make the preparation easier for you, let us give you some side dish suggestions that will suit your grilled lamb!
When we think of grilled lamb, we think of couscous. The two are perfect for each other! Simply put the couscous in large bowl (must be heatproof) and add some boiling water. Let it stand for a few minutes then stir to separate the grains. Let the grains cool for about 5 minutes and then add the chopped onions, fresh mint leaves, coriander leaves, parsley, pistachio kernels, olive oil and orange juice. Season with salt and pepper to taste.
2. Rice Pilaf
If you love serving rice with your grilled lamb, try this rice pilaf recipe! Melt some butter over medium heat. Add in some chopped bell pepper, onions and season with salt. Let the onion caramelize for a few minutes and then add the rice. Stir the ingredients frequently and let them cook for about 4 minutes. Add the saffron, orange zest, broth, bay leaves and again, season with salt. Bring the mixture to a boil. Top the rice with peas then transfer to a pan. Bake for about 15 minutes in a preheated oven at 350 degrees Fahrenheit. Once done, remove the orange zest and bay leaves. Put on a platter then garnish with pistachios and raisins.
Sauté some onions, garlic and bay leaves in a skillet with olive oil until the onions have softened. Add the eggplant slices and let them cook for about 8 minutes. Don’t forget to stir occasionally. Add in the zucchini slices, tomatoes, red bell pepper and season with salt. Let the veggies cook for 5 to 7 minutes. Put the basil in and add some pepper to taste. There goes your ratatouille.
4. Orzo Salad
If you don’t want to cook a pasta dish and prepare another salad separately, just go for orzo salad. It’s a pasta-veggie combination that’s easy to prep and undoubtedly delicious, too! Just cook some orzo pasta for about 8 minutes until they’re al dente. Drain them afterward. Drain the artichoke hearts as well. Set artichoke marinade aside. Get a large bowl and combine the orzo pasta, tomatoes, artichoke hearts, onion, feta cheese, parsley, olives, lemon juice, lemon pepper and oregano. Toss all the ingredients and refrigerate for about an hour. Drizzle with the artichoke marinade before serving.
Barbecued meat are best with starchy side dishes so don’t forget your Au Gratin Potatoes! All you have to do is get a large saucepan and melt some butter over low heat. Add in some flour then season with salt and pepper to taste. Stir until the mixture is smooth and gradually add some milk. Let the mixture boil until it has thickened. Remove from heat and then put the shredded cheddar cheese in. Stir until the cheese has melted. Add the potato slices and some chopped onions. Transfer the mixture to a baking dish and cover it. Bake in a preheated oven at 350 degrees Fahrenheit for approximately 1 hour.
